This dehydrator has a permanent place in the utility room, basement or shed and is put to use after the forest trip for drying mushrooms, beech and chives; but it is small enough to be able to stand in the kitchen. The dill of the garden, the mushrooms of the forest, the herbs of the beach and the flowers of the field can all have a go in the dehydrator and be poured into glasses and pump up the winter food to a completely summery experience. And dehydration is a great way to concentrate flavor: a supermarket tomato generally tastes terrible, but if you blend a tray of tomatoes and dehydrate it, you get a very delicious, clear tomato flavor!
